Jicama Slaw

Ingredients

1 small jicama, peeled and cut into matchsticks

2 carrots, peeled and cut into matchsticks

1 cup purple cabbage, shredded

1 cup green or savoy cabbage, shredded

1/4 cup minced cilantro

1/4 cup red pepper diced small

1/8 cup olive oil

1/4 cup brown rice vinegar

juice of 1 lime

1/2 tsp red pepper flakes


Directions

Toss all ingredients together in a large bowl until well mixed.
