Cook 1 cup quinoa according to package directions or: 1 cup quinoa washed well, added to 1 1/2 cups boiling water. Stir and cover. Let cook over low heat about 15 minutes or until all water is absorbed. Let cool before adding dressing.
2 cups cooked quinoa
1 large sweet potato, peeled and cut into 1" cubes
1 bunch of kale, washed, trimmed and steamed
1/2 cup pomegranate seeds
1/4 cup olive oil
juice of 2 limes
1/8 tsp cayenne pepper
salt to taste
Toss sweet potato in olive oil, season with salt and pepper. Roast in oven at 350 until tender and just starting to brown.
Add cooled, cooked quinoa to large bowl with sweet potato, kale and pomegranate seeds.
In separate bowl, whisk together ingredients for dressing.
Add dressing to quinoa mixture and toss well to combine.
If you prefer a sweeter dressing, you can try adding 1 tbsp maple syrup or honey.
