Maple Rasted Carrots & Parsnips

Ingredients

5 carrots, peeled and cut into irregular chunks

1 lb parsnips peeled and cut into irregular chunks

3 tbsp olive oil

2 tbsp real maple syrup

salt & pepper to taste

Directions

Add carrots and parsnips to a medium bowl and drizzle with olive oil and maple syrup. Add sea salt and pepper to taste, and mix well to coat veggies. Add to a baking dish, cover and bake for 15 minutes. Uncover, stir, and allow to cook another 10 minutes or until tender.
