Pinto Bean and Brown Rice Grilled Burrito

This is a perfect way to use up leftover brown rice! To reheat rice without a microwave, simply add rice, 1/2 tsp chili powder, 1/8 tsp salt and a small amount of water to a saucepan, and slowly heat while covered until warmed through. You can leave out the tortilla and make this a burrito bowl by adding some shredded lettuce.

Cooking Time

10 minutes


2 cups leftover cooked brown rice

1 can Eden pinto beans

1 tomato, diced

1/2 purple onion, diced

1/2 an avocado cut into 1/2" chunks

1/4 cup chopped cilantro

1/2 tsp chili powder

your favorite hot sauce

shredded cheddar cheese

4 burrito size tortillas


Heat pinto beans and chili powder in a small pan about 5 minutes.

Place tortilla on a heated skillet and layer all ingredients on one half of the tortilla. Fold over, gathering filling, and tuck edge of tortilla, bringing the sides in as well. Roll tightly, and heat on skillet until browned on both sides.
