Quinoa Burrito Bowl With Chili Lime Dressing

This quick dish makes a great taco or burrito filling!


1 cup cooked quinoa

1 1/2 cup frozen corn kernals

1 red pepper, diced

1 can black or pinto beans

1 head romaine lettuce, shredded

1/2 purple onion, diced

1/2 bunch of fresh cilantro, finely chopped

2 avocados cute into cubes


Juice of 2 limes

1/4 cup extra virgin olive oil

1 clove garlic, finely minced

1/2 tsp cumin

salt and pepper to taste


Make your dressing separately and add all ingredients to a mixing bowl. Pour dressing over and stir well to coat.
