This is a great side to keep in the fridge. You can have it as a side or add to a bed of greens (I love it over arugula) and dress with additional lemon juice and olive oil.
1 can chick peas
1 small cucumber, diced into 1" cubes
1 small tomato, diced
1/4 cup purple onion, diced
1/4 cup flat leaf parsley, finely chopped
1 tbsp olive oil
juice from 1 lemon
salt and pepper to taste
Add all ingredients to a bowl and mix well.
