Sauteed Collard Greens with Snow Peas and Black Beans

1 bunch organic collard greens, washed, stems removed and cut into thin slices

1 cup snow peas, washed and trimmed

1 can black beans, drained and rinsed

2 cloves garlic, diced

1/4 cup purple onion, diced

juice of 1 lime

about 1/4 tsp lime zest

1 tsp olive oil

2 tbsp water

salt to taste

Heat skillet over medium heat. Add olive oil, onion & garlic. Saute about 5 minutes or union onion is soft.

Add collard greens & snow peas and 2 tbsp water. Cover and cook about 3 minutes.

Add beans and stir to heat through. About 3 more minutes.

Garnish with lime zest and lime juice and serve.
