This salsa is amazing! It is great served with grilled salmon, over a bed of greens or simply by the spoonful all by itself. My kids eat it straight out of the bowl.
2 fresh, ripe mangoes
1/2 cup diced red pepper
1/4 cup diced purple onion
1/4 cup chopped fresh cilantro
1 tbsp minced jalapeno pepper
juice of 2 limes
salt to taste
Add all ingredients to a bowl and stir well. All to sit 20 minutes or longer before serving to allow flavors to combine.
