Turkey & White Bean Chili with Lime Cilantro Slaw

1 pound ground turkey, browned and drained

3 Tbsp chili powder or to taste

2 tsp cacao powder

1 green pepper, diced

1 red pepper, diced

1 carrot, diced

1 sweet onion, diced

5 cloves garlic, minced

1 jalapeno pepper, minced

3 Tbsp olive oil

1 cup corn kernels

2 cans (or 2 cups cooked) white beans

1 14 ounce can diced fire roasted tomatoes

1 14 ounce can pureed fire roasted tomatoes

2 cups water

chopped cilantro and avocado slices for garnish


Heat oil in a large pot. Add peppers, carrots, onions, garlic, salt & pepper and saute until onions are translucent.

Add chili and cacao powders, turkey, tomatoes, beans and water.

Bring to a simmer over medium heat and allow to cook down until thickened. Taste for seasoning and adjust if necessary.

Add corn and cook an additional 5 minutes.

Serve with cilantro lime slaw and avocado.
