Quinoa Breakfast Bake

Ingredients

2 cups uncooked quinoa, washed well

2 cups unsweetened nut milk of your choice (I use almond for this)

1 1/2 cups frozen mixed berries

1 large apple, diced

1 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp ground cloves

2 tbsp melted coconut oil

3/4 cups mixed nuts (I use slivered almonds, walnuts and pecans)

1/4 cup real maple syrup



Directions

Preheat oven to 375 and lightly grease a baking dish with coconut oil.

Reserving nuts, add all other ingredients to a large bowl, and stir well to combine. Pour mixture into baking dish and bake about 40 minutes.

Remove from oven and sprinkle nuts on top. Place back in the oven for another 10 minutes.

Serve warm and enjoy!
