Apple Cinnamon Oatmeal

We are flooded with choices when we are shopping for breakfast, and even though the "quick" options are appealing, they are often loaded with artificial flavors, sugars and preservatives. By cooking and preparing most of our foods at home, we gain control over the ingredients used and adjust seasonings and flavor.

I try to avoid most added sugars in anything I buy or cook, but maple syrup is a mainstay at our house. I used brown sugar in this as a treat, and you may adjust the sweetness as you see fit. Perhaps honey is a better option for you, or eliminate the brown sugar and use all maple syrup.

This recipe uses thick rolled oats, and cooks in about 10 minutes. It has all the tasty components of a hearty and satisfying breakfast and my kids actually had 2 servings each today!

Apple & Cinnamon Oatmeal

1 cup oats of your choice (I used thick rolled oats)

2 green apples, diced

1/8 cup chopped walnuts

1 tsp cinnamon

1/4 tsp dried ginger

1/4 tsp nutmeg

1/4 cup maple syrup

1/8 cup dark brown sugar

1 1/2 cup water or apple cider (adjust sweetness if using apple cider)

Add all ingredients to your pot and bring to a boil. stir and reduce heat to medium. Simmer until oats is tender.
